Here is a recipe for Mutton Korma:
Ingredients:
- 500g mutton, cut into pieces
- 2 onions, finely chopped
- 2 tbsp ginger-garlic paste
- 2-3 green chilies, chopped
- 1/2 cup plain yogurt
- 1/4 cup oil or ghee
- 2-3 cloves
- 1 cinnamon stick
- 2-3 green cardamom pods
- 1 black cardamom pod
- 1 bay leaf
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garam masala powder
- Salt, to taste
- Chopped fresh cilantro, for garnish
Instructions:
- Heat the oil or ghee in a pan on medium heat. Once hot, add the cloves, cinnamon stick, green and black cardamom pods, and bay leaf. Sauté for a few seconds until the spices release their aroma.
- Add the chopped onions and green chilies, and sauté until the onions turn golden brown.
- Add the ginger-garlic paste and sauté for a minute or until the raw smell disappears.
- Add the mutton pieces and sauté until the meat is browned on all sides.
- Add the yogurt and mix well. Cook for 5-7 minutes until the yogurt is well mixed and the meat is cooked through.
- Add the cumin seeds, coriander powder, turmeric powder, red chili powder, garam masala powder, and salt to taste. Mix everything well and cook for another 10-15 minutes until the gravy thickens and the meat is tender.
- Garnish with chopped cilantro and serve hot with naan, roti, or rice.
