Mutton Korma

Here is a recipe for Mutton Korma:

Ingredients:

  • 500g mutton, cut into pieces
  • 2 onions, finely chopped
  • 2 tbsp ginger-garlic paste
  • 2-3 green chilies, chopped
  • 1/2 cup plain yogurt
  • 1/4 cup oil or ghee
  • 2-3 cloves
  • 1 cinnamon stick
  • 2-3 green cardamom pods
  • 1 black cardamom pod
  • 1 bay leaf
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala powder
  • Salt, to taste
  • Chopped fresh cilantro, for garnish

Instructions:

  1. Heat the oil or ghee in a pan on medium heat. Once hot, add the cloves, cinnamon stick, green and black cardamom pods, and bay leaf. Sauté for a few seconds until the spices release their aroma.
  2. Add the chopped onions and green chilies, and sauté until the onions turn golden brown.
  3. Add the ginger-garlic paste and sauté for a minute or until the raw smell disappears.
  4. Add the mutton pieces and sauté until the meat is browned on all sides.
  5. Add the yogurt and mix well. Cook for 5-7 minutes until the yogurt is well mixed and the meat is cooked through.
  6. Add the cumin seeds, coriander powder, turmeric powder, red chili powder, garam masala powder, and salt to taste. Mix everything well and cook for another 10-15 minutes until the gravy thickens and the meat is tender.
  7. Garnish with chopped cilantro and serve hot with naan, roti, or rice.
