Pulihora is a popular South Indian dish made with rice, tamarind, and spices. Here’s a simple recipe for preparing pulihora:
Ingredients:
- 1 cup rice
- 1.5 cups of water
- 1 lemon-sized tamarind ball
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 tablespoon chana dal
- 1 tablespoon urad dal
- 1 dried red chili
- 10-12 curry leaves
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon salt
- 1/4 cup roasted peanuts (optional)
- 1 tablespoon chopped coriander leaves
Instructions:
- Wash the rice thoroughly and soak it in water for about 30 minutes.
- Drain the water from the rice and cook it with 1.5 cups of water in a rice cooker or on the stove until it is fully cooked.
- In a separate bowl, soak the tamarind in hot water for about 15-20 minutes. Squeeze the tamarind and extract the juice. Discard the pulp and seeds.
- In a pan, heat 2 tablespoons of oil on medium heat. Add mustard seeds and let them splutter.
- Add cumin seeds, chana dal, urad dal, dried red chili, and curry leaves. Sauté for a few seconds until the dals turn golden brown.
- Add the tamarind juice, turmeric powder, red chili powder, and salt. Mix well and let the mixture cook for a few minutes until the raw smell of the tamarind disappears.
- Add the cooked rice to the pan and mix well with the tamarind mixture. Add roasted peanuts (if using) and mix well.
- Garnish with chopped coriander leaves and serve hot.
