Pulihora Preparation

Pulihora is a popular South Indian dish made with rice, tamarind, and spices. Here’s a simple recipe for preparing pulihora:

Ingredients:

  • 1 cup rice
  • 1.5 cups of water
  • 1 lemon-sized tamarind ball
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 tablespoon chana dal
  • 1 tablespoon urad dal
  • 1 dried red chili
  • 10-12 curry leaves
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon salt
  • 1/4 cup roasted peanuts (optional)
  • 1 tablespoon chopped coriander leaves

Instructions:

  1. Wash the rice thoroughly and soak it in water for about 30 minutes.
  2. Drain the water from the rice and cook it with 1.5 cups of water in a rice cooker or on the stove until it is fully cooked.
  3. In a separate bowl, soak the tamarind in hot water for about 15-20 minutes. Squeeze the tamarind and extract the juice. Discard the pulp and seeds.
  4. In a pan, heat 2 tablespoons of oil on medium heat. Add mustard seeds and let them splutter.
  5. Add cumin seeds, chana dal, urad dal, dried red chili, and curry leaves. Sauté for a few seconds until the dals turn golden brown.
  6. Add the tamarind juice, turmeric powder, red chili powder, and salt. Mix well and let the mixture cook for a few minutes until the raw smell of the tamarind disappears.
  7. Add the cooked rice to the pan and mix well with the tamarind mixture. Add roasted peanuts (if using) and mix well.
  8. Garnish with chopped coriander leaves and serve hot.
